Couldnt resist adding my two bob. My favourite Butternut recipe is as follows. Its a Scallop Potato and Butternut dish. Thinly slice your potato into rounds. do the same with the butternut. Lay them in a baking dish in a concertina effect. Pour over the top grated onion..chicken stock flavouring..salt pepper..chopped up bacon pieces..and then pour over the top 600ml of fresh cream. Top with grated cheese and parmesan and bake in the oven for 50mins at 200C. (adapted f...Butternut squash - my favourite recipe:<br />(adapted from Waitrose Food Illustrated magazine)<br /><br />Peel butternut squash (I use one of those Y shaped potato peelers) and cut into smallish cubes. Fry in some butter +/or olive oil with a cover on the frying pan for about 10 mins. Add some cut up sage leaves and pine nuts and fry for another few mins.
