You could get purple yam cake and Ube mochi (a purple ice cream with a thin rice pastry surrounding it - delicious).

This looks live a very interesting recipe: http://burntlumpia.typepad.com/burnt_lumpia/2007/09/purple-gnocchi.html

After having a brief google it looks like the purple yam is mostly used as a dessert ingredient.Hollow Legshttps://www.blogger.com/profile/07152329184111658897noreply@blogger.comtag:blogger.com,1999:blog-37188293.post-32642220571289639402008-07-01T09:03:00.000+01:002008-07-01T09:03:00.000+01:00Mmmmm! another great recipe and useful yam info. H...Mmmmm! another great recipe and useful yam info. Have you come across Kumara? I found them in Sainsbury's the other day - and was transported back XX years to our honeymoon in New Zealand! I scrubbed them and left the skins on, tossed them in oil and seasoned well then roasted in the oven - the taste memories came flooding back - Abel Tasman National Park, a meal before kayaking in the creek. Kumara are little purple yams with orange flesh, slightly floury with a nutty flavour.

Good luck with the book launch Freddie!!!

Celia
xCelia Harthttps://www.blogger.com/profile/12776686088752602321noreply@blogger.com
