I did something vaguely similar - found it took ages to cook. It reminded of a cross between artichoke hearts and asparagus. When I lived in Southeast Asia, some dishes included a white salsify that was particularly delicious with thinly sliced beef. It flavored the sauce/gravy beautifully and did have an oyster taste to it. I always wondered if it's got the German name from the fact that it turns your fingers black or because it looks black before you peel it. The slim tapering roots have a pale skin like a parsnip.<BR/><BR/>Scorzonera = scorzonera hispanica<BR/>A perrenial. After a year the roots can be harvested. The following years the shoots and flower buds are harvested. The flowers are yellow and similar to a dandelion.
