A is for Asparagus with poached egg



What luxury! I'd never tried this before one of you recommended it. Asparagus wrapped in ham and topped with a poached egg and placed on a slice of toasted bread.
Freddie was seriously impressed. To be honest he is easily impressed when it comes to my cooking. He is touchingly loyal about all my efforts, however modest and regularly boasts to his mates about his fathers' qualities as a chef, based entirely on the one dish - scrambled eggs. So when I rolled out tonight's vegetable challenge he turned quiet. And not the kind of quiet that is usually accompanied by a dramatic slump back into his chair, eyes lifted to the ceiling in disgust. Oh no - this time he was impressed. And he ate every bit. Who would have thought that three vegetables into our GreatBigVegetableChallenge we have already found a firm favourite?
Its time to move on. Now I am told that avocado is not a veg but a fruit so its on to the B's. Broccoli is the next challenge. Any of you out there know what to do with Broccoli to give it the red carpet treatment? Please leave your comments, ideas, recipes or encouragement.......

    Don't mess about with it. We steam it in one of those stainless steel flower steamers and leave it with some crunch. Husband finds it bland so a teaspoon of soy sprinkled over keeps him happy!Above all don't overcook!

    It isn't at all glamorous, but if you mash up cooked brocolli and add some garlic, olive oil and toasted pine nuts it makes a very nice pesto-ish sauce for pasta. I have the opposite problem to you, my children will ONLY eat broccoli!

    Whilst I fully am with the "don't overcook broccoli" comments, don't forget it makes lovely soup (great colour too).

    Have you ever tried shredding sprouts & stirfrying them? Or better still - Brusell tops - fantastic veg, try a greengrocer as the supermarkets rarely stock them, far far nicer (IMO) than "straight" Brusells. But if your son doen't like them, that's OK - see the "what veg don't you like" thread - even "foodies" have their likes & dislikes.

    Agree that overcooked broccoli is pretty horrible. Also, it needs to be served piping hot as it cools down very quickly - and cold, wet soggy broccoli is not a fun thing to eat!

    I love broccoli in soup with spinach and other green veg and a dash of nutmeg and cream. It's also delicious in quiche made with dill, crème fraîche and smoked salmon (just blanch the florets first).

    It's great in stirfries too, with a dash of soy sauce as someone mentioned. We had it in Malaysia this summer, stir fried with soy sauce and ginger and chilli and it was delicious.
