C is for Courgette





Farewell Celeriac, hello Courgette!

There is a marketing opportunity for celeriac growers in Northern Europe. It seems that all our New Zealand bleaders and many of our Northern American visitors weren't familiar with celeriac. When Freddie, chief veg-phobic, rates a vegetable highly, then you really know you are onto something good. Time for farmers to export Celeriac to the New World.

Its courgette now - and tonight we are trying out a courgette and mint soup left by one of you. Please send us your favourite courgette recipes and pronto.

  1. Yours is a fun project, for sure! This was my own after-school favorite. But you might check here, too, surely there'll be something for a kid to like! ;-)

    Hi, A fave of mine is sliced courgette and leek.. fried in butter and oil until all soft. Add a bit of salt and pepper :) Yum

    Hey,

    I particularly like courgettes chopped and stir-fried with garlic and soy sauce - NEVER boil them!

    I also like them baked a bit, halved, scooped out a bit and mixed with spicy pork mince cooked(cumin, garlic, ginger, harissa, chillis), stuffed back in, topped with cheese and grilled. You can omit the chillis if the kids don't like them but it's very tasty.
