Not that much of a vegetable hater?

A very positive blog review by Chow.com and Serious Eats means that Freddie now has several new football stickers to place on the map for visitors to the Great Big Veg Challenge. He adopted a swagger at breakfast when he read the words "he can't really be that much of a vegetable hater..." goading me, " See Mum, I'm not that bad at vegetables." Now I believe in the power of positive praise, in presenting the half-full glass but I have to put things straight now. In another life Freddie must have been a gold prospector and more specifically a pan-handler. You know - the one that sieves the silt from a river to capture any tiny glint of gold. This is what he does with vegetables. And he has been doing this for so long he is an expert in picking out any fleck of vegetable to avoid eating it. Which is why it's so extraordinary for him to be trying out all these recipes on the blog. It is his avatar; his alter-ego on the internet. The vegetable hater (and believe me, he really did fall into that category) is trying out being a vegetable lover under the safe cover of a blog. The blog recipes are received with open mouth and ready fork. But last night he scraped the onions off a pizza made by his Dad just like the old days. So, more blog recipes needed!

  3. I like my carrots sweet - try this recipe!

    Glazed Carrots and Sugar Snap Peas

    5 medium carrots, thinly sliced diagonally
    1/2 pound sugar snap peas, trimmed
    1 Tbsp honey
    2 tsp unsalted butter
    1/4 tsp table salt
    1/4 tsp ground cardamom
    1/8 tsp white pepper

    In a large skillet, bring 3/4 cup water to a boil. Add carrots. Reduce heat and simmer, covered, until softened, about 10 minutes. Pour off liquid.

    Stir in sugar-snap peas, honey, butter, salt, cardamom and pepper. Cook, covered, until peas are just tender, about 4 minutes.

  4. PS: Though this is implied, I forgot to actually say - I love your blog, Freddie & his Mom! Thanks for posting photos and recipes for things you've tried. I too fight the love/hate battle with vegetables. So I will be reading on with interest. Chow.com was how I found you, just in case you're curious!
